Mexican vegetarian sopes.. Easy and fast to cook.
Today I was really busy so I thought -what can I cook really fast?
I cooked this delicious sopesitos: tortillas for sopes, beans, oaxaca cheese, spinach and that’s it.

So this is what I cooked yesterday :) Green juice and kimchi bokkeumbap. For those who don’t know bokkeumbap is korean fried rice with vegetables. I like to add kimchi and all kind of vegetables to make it my style. So it has: brown rice, onion, garlic, carrots, zucchini, bell peppers (red, yellow and orange to make it colorful ^^ ), portobello mushroom, kimchi, and the traditional condiments that make the Korean flavor!! My green juice has: cucumber and spinach (it’s an easy one, I just kind of mix whatever I find in my fridge). Today I’m still eating yesterday’s kimchi bokkeumbap.. I’m used to cook a lot so the next day I don’t have to. So right now I’m just going to relax and watch something.. Hope you all have a nice afternoon :D
So I became vegetarian (api-ovo-lacto-vegetarian to be precise) a month ago. And I’ve been making a lot of delicious recipes (I love to cook <3 )
Today this is my breakfast: green apple, red grapes, strawberries, raisins, cranberries, oatmeal, granola, nuts, chia, honey and almond milk :D

DOWNTOWN Mexico Hotel/DOWNTOWN Beds Hostel was featured in Yatzer last month and why shouldn’t they be?!
Formerly a Colonial palace, the enchanting building was transformed into a contemporary hotel, beautifully washed in natural light and using native materials such as cement tiles, brick, and hand painted murals. Modern decor contrasting the palatial architecture is wonderfully composed and bursts of color add to the renewal of life. The elevator is original to the building and it is splendidly crafted in bronze and brass to further note the stripped brick wall of the chute.
The mix of finishes from wood, to stone, to metal along with the communal vanity with its brick sink grate perfectly align with the local flavors while still delivering a chic and linear association with current trends.
The vertical garden wall adorned with a bicycle adds a touch of whimsy and the rooftop pool and lounge provide a modern respite to take in the historical surrounds.
Oh my gosh is it splendid!
haha I was looking at the pictures and thought “wow this looks a lot like Mexico, where would it be?”, then I saw the Mexican flag in the last pictures.. rechecked the pictures again and realized I live some blocks from this hotel.. funny
